I am planning to etch a quartz wafer to make a tuning fork and wanted to have my design proposal approved by others before proceeding.

The diagram below is the usual electrode configuration for a quartz crystal tuning fork. An AC voltage is applied to the prongs for mechanical excitation.

However, I want to mechanically excite a tuning fork and measure the resulting voltage signal.

For that purpose, I think having electrodes only on one side, as shown in the 2nd image, is enough.

The piezoelectric nature of the tuning fork will generate charge accumulation and if my goal is just to read out the tuning fork signal, I don't see why i need to have electrodes on all 8 surfaces.

What are your thoughts on this?
