Because the theory that supports it is Newton's theory. But it is not the case for electromagnetism. So, Maxwell's equations are different ). And by Maxwell's equations we have that c is the speed of light so using Galilean relativity we realize that the only reference frame that yields c is the reference frame of ether, which contradicts the relativity principle.
