If you look at just the fermions and gauge fields, there's no difference between $SU(2)$ and $SU(3)$. It's only because the Higgs has $SU(2)$ and not $SU(3)$ charge, and we treat Higgs-coupled particle pairs as the "same" particle, that we find $SU(2)$ and not $SU(3)$ couples differently to halves of the "same" particle. It's not because of any property of the gauge fields themselves or of the fermion charges. | |
