What is the shear stress of a fluid?
One book defines the shear stress $\tau$ of a (Newtonian) fluid as
$$\tau = \eta \frac{\partial v}{\partial r} $$
where $\eta$ is the viscosity. There is not much context, so I've made some guesses. ...
